Bubble and Squeak!

The first time I came across this name in the menu (because it was the cheapest meal) was at a small restaurant which was serving breakfast. I didn't know what to expect and I ordered it with a poached egg. The waiter placed the plate in-front of me and I took a bite, it was one tasty meal and I polished the plate in seconds.

The name comes from the bubble and squeak sounds made as it cooks. It is normally made with the left over roast dinner but can be made from the scratch as well. The name bubble and squeak is used throughout the United Kingdom. In parts of the country the dish may be referred to as bubble and scrape. I wanted to try it at home but I forgot about it until last Saturday. I checked for the recipe online and I got different versions of it. One thing I noticed when I had B&S for the first time it was a bit bland. So I wanted to make my version of B&S and this is how I made them.

This serves 2 people and is so easy to make.

Ingredients
4 - Medium sized potatoes
1/4 part of Cabbage
2 - Green Chillies(de-seeded)
1/2 a spoon Turmeric
1/2 a spoon chilli powder
1/2 a spoon garlic powder or finely chopped garlic
1 - spoon fresh ground pepper
Salt to taste

How to make
  • Boil the potatoes with the skin until they are soft.
  • Cool them for a while. Peel and mash with hands.
  • Meanwhile grate the cabbage and mix with the potato.
  • Add the turmeric, chilli powder, garlic powder and the chillies and mix it well in a non-stick container using your hand.
  • Then heat a non-stick pan with a spoon of sunflower oil.
  • Make small patties using both the hands and fry for 2-3 minutes on both the sides.
  • Your Bubble and Squeak is done mate.
  • Enjoy this scrumptious breakfast.

The Oxford Empty Spaces Arts (TOES)

TOES (The Oxford Empty Spaces) arts exhibition, was an initiative by a group of artists, to use empty shops in Cowley / Oxford area as viewing art galleries.

Date: Sunday the 4th of October to Saturday the 28th of November 2009, for 8 weeks.

Templars Square had given us the gallery space for free and The Oxford City Council's 'Arts Development Fund' had funded the project in 2009.

TOES took off in February 2009, after an enquiry with the managers of the Templars Square shopping centre in Cowley, to use one of
their vacant shops as a temporary viewing art gallery, and to have some art event going on in Cowley area.

There seemed to be a noticeable increase in the number of empty shops, and a few art enthusiasts waiting to make use of the space for creative activities in Cowley.

The TOES arts project was initiated to use the empty spaces as viewing galleries for the public by displaying art and to generate community interest in the kind of art that’s happening in the area.

The participating artists were from varied backgrounds and disciplines, practicing different media. This variety of display created an ‘art stop’ for visitors in Oxford, and also promoted new artists works.
